I’m starting this new tag for this blog about — what else? — stuff we like. And if my predictions ring true, “stuff we like” is going to be mostly food. What we like today is Ina Garten’s Perfect Roast Chicken.

Today being Labor Day, I had the entire day off – a rare occasion indeed. I’m pretty down with the whole 30-minute meal thing during the week because I honestly don’t feel like spending more time than that on a meal after work. But today I had spare time and cold, wet raincloud lingering overhead so I had to make something fabulous.

Enter the Ina Garten chicken. I’ve seen other food bloggers rave about this recipe and I wanted to try it but I was kind of nervous since I’d never cooked a whole chicken before. Visions of a pink, gnarly mess ran through my mind. What the eff are giblets and why would I care if some might be missing, as the packaging warned?

Well, not only did I find out what giblets were (and that they’re completely disgusting and can be totally missing from now on, as far as I care) but the chicken also turned out amazing. The recipe is fool-proof and satisfying and you’re gonna wanna try it. The carrots are awesome and have you ever had fennel? It’s the weirdest vegetable but it’s so good. It smells kind of like black licorice and tastes a little like it too but if you don’t like black licorice, don’t let that dissuade you. We had the chicken and veggies with mashed red skins, a salad and my Aunt Heidi’s 90-minute roll recipe she gave us at the wedding shower.
